Wine & Dine Collaboration Dinner: Friday, 4 Dec, 19h00, The Restaurant at Grande Provence Franschhoek Cap Classique and Champagne Festival: Saturday, 5 to Sunday, 6 December
Grande Provence is celebrating their debut at the Franschhoek Cap Classique and Champagne Festival with a luxurious Wine and Dine Collaboration dinner showcasing exceptional Méthode Cap Classique and Champagne on Friday, 4 December on the estate.
Winemaker Karl Lambour who released his first Cap Classique earlier this year will be joined by fellow MCC producer Silverthorn, Champagne Jacquart and Champagne Lanson for this singular fine dining experience at The Restaurant at Grande Provence.
Executive Chef Darren Badenhorst has created some extraordinary dishes to complement the unique and lively character of each of these opulent MCC’s and champagnes.
Starting the evening will be Silverthorn Jewel Box 2011 paired with griddled marron ceviche, Alaskan crab, charred corn and elements of citrus.
For the Jacquart Extra Brut, Chef Darren has chosen 12-hour Franschhoek trout gravlax, served with a mosaic of beetroot scales, iced baby radish and vineyard alfalfa.
The maiden Grande Provence Brut Méthode Cap Classique 2009 will be paired with a selection of cold smoked tuna, seared tuna, saffron tomato, panko and yolk sphere and a dash of anchovy crème.
Adding the finishing touch will be Lanson Black Label with frozen mulberry yoghurt parfait and liquorish glazed beets drizzled with a port and violet syrup.
